Mitoku Organic Kyushu Brown Rice Vinegar 300ml
One of the world’s most nutritious and delicious vinegars are made from 100 percent brown rice wine (sake) that is fermented in earthenware crocks and buried in the ground. This unique 1,000-year-old method survives only on Japan’s southern island of Kyushu. Because it is made from brown rice, with its bran and germ intact, kuro-su (black vinegar) has a high concentration of essential amino acids. It is recognised for its mellow taste and medicinal quality.
Ironically, the finest brand Kyushu vinegars may contain a rice sediment, which if disturbed, makes them look muddy. Rather than being a cause of concern, this sediment is a sign of quality.
Refreshing and delicious, naturally brewed brown rice vinegar is a wonderful seasoning. Characterized by a light sweetness, full-bodied yet mild, without the sharpness often associated with industrial vinegar.
Use in salad dressings, pickling mixtures, marinades, sauces, dips, spreads and entrees. Brown rice vinegar also enhances the flavour of grain, vegetable and fish dishes.
